1. Pound in a mortar pestle to make a paste (Sambal Spice, Onion, Garlic, Red Chilli, Cashew Nut, Tomato, Fish Sauce, Lemon Juice to taste, Lemongrass, Palm Sugar, Broth Powder).
2. Marinate fish with sambal spice heavily and wrap it in banana leaf.
3. Now bbq it on hot charcoal or bake it in the oven for 8 min @160 degree.
