Blueberry & Lemon Chia Pudding

  • 1/2 Cup Pink Harvest Farms Chia Seeds
  • 1 Cup Coconut Milk
  • 1 tbsp Honey / Maple Syrup
  • 1 tsp Lemon  juice
  • 1 tsp Lemon zest
  • 1/2 cup Blueberries (fresh of frozen)
  • The thickness and sweetness can be adjusted to your taste.
  • Can be stored in the fridge for up to 5 days.

1.  Add Chia Seeds, Coconut Milk, Honey / Maple Syrup and Lemon juice to a bowl. *Whisk until combined.
2. Refrigerate for at least 6 hours or overnight.
3. When ready to eat, place half the blueberries at the bottom of a bowl and add spoon *Chia pudding on top of it.
4. Top with lemon zest and more blueberries.
