1. Add Chia Seeds, Coconut Milk, Honey / Maple Syrup and Lemon juice to a bowl. *Whisk until combined.
2. Refrigerate for at least 6 hours or overnight.
3. When ready to eat, place half the blueberries at the bottom of a bowl and add spoon *Chia pudding on top of it.
4. Top with lemon zest and more blueberries.
