Wholesome Egg Meal

  • 1 tbsp Oil
  • 1 tsp Garlic, chopped
  • 1 Small Onion, chopped
  • 2 Large Tomatoes, finely chopped
  • ¼ Cup Tomato Puree
  • ½ tsp Red Chili Powder
  • 1 tsp Cumin powder
  • A pinch of Sugar
  • Salt & Black Pepper, to taste
  • 3 Whole Eggs
  • Few Spinach Leaves
  • 3 Slices of Jalapeno
  • ¼ Cup Crumbled Feta
  1. Heat oil in a pan. Saute garlic till fragrant.
  2. Add onion and cook till golden. Add tomatoes and cook till all mushy.
  3. Add in tomato puree and cook for more 2-3mins.
  4. Now add red chili powder, cumin powder, sugar and mix well.
  5. Season with salt and pepper.
  6. Lower the flame and spread the mixture on the pan evenly. Crack 3 eggs on top.
  7. Place some spinach leaves and jalapeno on top. Sprinkle some salt and pepper on top.
  8. Cover with lid and cook for 5-7mins.
  9. Turn off the flame, remove the lid and top it off with crumbled feta cheese.
  10. Serve hot with toasted bread
